Nothing says summer like snacking on watermelon, strawberries, and popsicles between dips into the water. Our fruit consumption really goes through the roof during the summer months, which I mostly love. The only part I don’t love is that fruit isn’t very filling, so it will leave kids (and adults) constantly in search of another snack.
That’s where adding some fat to a snack comes in. It’s filling, makes food taste good, and helps your body absorb fat-soluble vitamins. To make the frozen treats above, we followed these instructions.
- Take about a cup of coconut oil and melt it on the stove.
- Take about a half cup of strawberries (we used frozen ones) and blend them until smooth in a food processor or blender. You may need to add a little liquid and/or thaw the fruit if you’re using the frozen kind.
- Add some honey to taste.
- Pour them into silicone molds (we use these) and pop them into the freezer for about 15 minutes.
